Role Overview

The Executive Chef (or Head Chef) is responsible for all food production at a hospitality property — designing menus, managing kitchen teams, controlling food costs and maintaining hygiene standards. Jamaica’s culinary scene blends traditional Jamaican cuisine (jerk, ackee and saltfish, escovitch fish) with international influences, and an Executive Chef must navigate both for different guest segments.

Qualifications & Path

City & Guilds Professional Cookery, or a diploma from HEART/NSTA Trust’s culinary programmes, provides the foundation. Many Executive Chefs also hold international qualifications (ACF, WSET). The career path typically runs: Kitchen Porter → Commis Chef → Chef de Partie → Sous Chef → Executive Chef, taking around 8–12 years.
